Pumpkin pie anyone?
I decided this year after halloween I would clean, chop, cook down, blend, and bag in quart size bags the girls pumpkins. I was going to can in, but I didn't have a pressure cooker, so I decided to freeze it. I started about noon and I'm still bagging up pumpkin. I will take a picture and post it when I'm done with the project. If anyone has some fun pumpkin recipes they would like to share please sent them my way. I figure now I can make my thanksgiving pies and I don't have to buy the pumpkin. I'm going to make pumpkin bread, and I found a yummy pumpkin cheesecake recipe online using splenda. Right now I have 5 quarts done and many more to go. The buzzer just went off. I'll post some pictures later.

Holy cow, you are amazing. Good for you for not letting your pumpkins go to waste!
Sorry no pictures. I was so wiped out when I got finished. I ended up with 12 quarts of freezer bags full of pumpkin. I had to borrow my sister in laws freezer since I didn't have the space in my little freezer here at our aparment. When we buy our house I'm hoping to can more and I want to do some freezer jam.
I am so impressed! More work then I think I could handle :) Good for you!
